Production process

The process of making tequila starts with the cultivation of blue agave plants, which take 7 to 10 years to mature. Skilled workers, known as jimadores, harvest the agave hearts, or piñas, and transport them to the distillery.

At the distillery, the piñas are baked or steamed to convert their carbohydrates into fermentable sugars. The cooked piñas are then crushed to extract the sweet juice, which is fermented in large tanks with yeast to produce alcohol.

Finally, the fermented juice undergoes distillation, typically twice, to purify the alcohol. The resulting tequila is either bottled as blanco tequila or aged in wooden barrels to create reposado or añejo varieties. The aging process imparts additional flavors and colors to the tequila.
