Organic farming is at the heart of every aspect of our tequila production at Hacienda Jalisco, where a holistic approach integrates crop and livestock farming with agave cultivation. Our talented team excels in nurturing agave plants, developing new land, and working with livestock to create a thriving ecosystem.
### Sustainable Land Development
When developing new land, we start by clearing it with goat herds that remove coarse vegetation like thorny shrubs and weeds. This is followed by planting beneficial cover crops to condition the soil and build organic matter. For future agave fields, we plant seasonal crops such as maize or beans, which can be harvested for feed or grazed off by cattle, then worked back into the soil to enhance its fertility.
### Integrated Livestock Management
Our estate-raised sheep graze the agave fields, controlling grass growth in the spring and summer. They return after harvest to tidy up the fields before the next planting season. Their manure, along with compost made from local materials, enriches the soil and promotes healthy agave growth.
### Poultry and More
We also employ a range of poultry, including various breeds of chickens, to control pests naturally. These birds help manage insect populations, and their eggs are used both for feeding our team and as a natural fining agent in the tequila production process. Additionally, pigs and bees have found their place on our estate, contributing to the farm’s biodiversity and productivity.
